What to Plant in March: A Fun & Friendly Guide for Gardeners in the North Carolina Mountains
Hey there, fellow plant lover! If you’re anything like me, you love gardening but sometimes feel like you’re always running a little late to the game. (Oops, did I really forget to start my seeds again?) Well, this year, we’re getting ahead of the curve together!
March is an exciting time in the North Carolina mountains—winter is finally giving us a break, and spring is teasing us with warmer days. Whether you’re working in your greenhouse or getting your hands dirty outside, here’s what you can plant right now in Zone 7a and 7b!
Greenhouse Goodies
If you’ve got a greenhouse (or even a sunny windowsill), it’s time to get these babies started:
Tomatoes – Because is it even summer without homegrown tomatoes?!
Peppers (Bell, Jalapeño, etc.) – Spicy, sweet, and everything in between!
Eggplants – Perfect for roasting, grilling, or making baba ganoush.
Herbs – Basil, parsley, and cilantro to keep your kitchen stocked with fresh flavor.
Flowers – Marigolds, zinnias, and cosmos for those summer pops of color.
Outdoor Planting Party
If you’re ready to brave the cool mornings, these hardy plants can handle it:
Carrots, Radishes, & Beets – Straight into the soil they go! Root veggies love the cool weather.
Leafy Greens – Spinach, kale, Swiss chard, and lettuce are all fair game.
Peas – Because fresh garden peas are way better than store-bought!
Potatoes – If you haven’t tried growing container potatoes yet, DO IT. So fun!
Onions & Shallots – These little guys will reward your patience later in the season.

Tips for Success
Prep Your Soil – Compost = happy plants.
Watch for Frost – Those sneaky late frosts can be brutal! Cover delicate plants when needed.
Mulch is Your BFF – Helps keep moisture in and weeds out.
Check the NC Planting Calendar – It’s a lifesaver! (Find it here)
Let’s Grow Together!
I’m learning more about gardening each year, and I love experimenting with new plants! Last year, I rocked tomatoes, cucumbers, some herbs, container potatoes (which did AMAZING), and even lettuce. This year, I’m pushing myself to stay on track—and hopefully, this guide helps both of us! 😆
